salmon recipes
So, with the great day we had at Wilson, we obviously ended up wth a bunch of fish. I have to admit,
and it maybe that I'm spoiled eating walleye all season here on Lake Erie, that I'm not a huge fan of
salmon. Love to catch 'em, for sure, but I find them to be a bit strong flavored.....so I figured...let's
experiment a bit with the grill!
The first one I tried was to rub the piece of the salmon with some Emeril's fish rub (kind of a cajun taste
to it). Olive oil drizzled on that, and the grill grid rubbed. Cooked it on low, but long enough to get some
nice char marks. While that was cooking, I took some horseradish sandwich spread, and add to that
a bunch of garlic powder. When the fish was done, I drizzled that over the fish...not bad....
So today, we tried another... Cracked pepper on both sides, patted it on. A touch of Olive Oil on the fish
and the grid. While that cooked, I mixed a couple about a quarter cup of blue cheese salad dressing with
red hot...kind of buffalo wing thing.... just before the fish was done, hit both sides with that for a minute,
and added a touch more at the plate.... Also not to bad.....
